Jersey Fine Tea is a boutique producer of single-estate teas on the beautiful island of Jersey.
Our gentle marine climate slows the growth of the Camellia sinensis tea bush, encouraging its roots to reach deeply for the natural nutrients that enhance the finished tea. We simply encourage what nature provides.
We hand pluck only the tender young leaves and buds, which are then carefully prepared to generate the nuanced aromas and flavours that evoke our unique island terroir, and make Jersey Fine Tea so fine.
We love our black, with its mellow, tempting sweetness. It’s warming, satisfying. It’s complex but subtle. It gets you wondering and dreaming. It’ll transport you through the keyhole to our lovely Jersey terrain.
From Mrs Pipon, Simpson and Gorey Hill Gardens in Jersey.
Sold in 15g bags.
Unlike green tea, black tea is deliberately oxidised to encourage flavour development and browning of the leaves.
Oxidation, by the way, is not a bad thing. It’s an integral part of making black tea, which encourages the transformation of simple polyphenols in the leaves to longer more complex ones with a richer flavour profile.
As our leaves are large, compared to CTC (crush, tear, curl) tea, which produces small leaf particles suitable for a tea bag, the finished leaves do not develop as dark a colour, and the liquor is relatively paler. Large leaves will also release fewer bitter flavours and astringent tannins.
The result is a sweeter cup, with a nuanced and interesting flavour profile.
