Jersey Fine Tea is a boutique producer of single-estate teas on the beautiful island of Jersey.
Our gentle marine climate slows the growth of the Camellia sinensis tea bush, encouraging its roots to reach deeply for the natural nutrients that enhance the finished tea. We simply encourage what nature provides.
We hand pluck only the tender young leaves and buds, which are then carefully prepared to generate the nuanced aromas and flavours that evoke our unique island terroir, and make Jersey Fine Tea so fine.
Our green tea makes a moreish cup with a soft round mouthfeel and refreshing vegetal notes.
To test its limits, we treated it harshly in the brewing process, steeping it in boiling water for five minutes plus. And while you’d expect a little bitterness and astringency from green tea, ours is mild, even when abused.
So, for those who think they don’t like green tea and find it mouth puckering, we’d encourage you to give ours a try!
From Mrs Pipon, Simpson and Gorey Hill Gardens in Jersey.
Sold in 15g bags.
One of the defining features of green tea making is the firing process.
To maintain the green colour of a green tea, our leaves are heated in a wok to kill the enzymes that cause browning of the leaves, or oxidation.
The effect is to preserve the simple polyphenols of the leaf, which give green tea it’s distinctive more raw and vegetal flavour.
